Swedish Pancakes with Lingonberries

 

 

2 1/2 Cups flour

3 Table spoons sugar

1 Teaspoon salt

4 Cups milk

7 Large eggs

1 Stick butter or margarine

 

Stir together dry ingredients in a large bowl.  Mix eggs and milk together with wire wisk till well mixed together.  Gradually add this to the dry mixture, a little at a time.  Mix well after each addition.  To keep pancake intact when turning, let batter stand for 1/2 hour.  Stir before cooking.

 

Grease 8" or 9" skillet with butter or margarine and heat over medium heat.  Using 1/3 cup of batter, pour into hot skillet and roll pan to spread evenly.  Cook until bottom of pancake is golden brown and top is starting to bubble(about 1-2 minutes).  Carefully loosen edges with spatula, then gently flip pancake and continue to cook until golden brown(about 1 minute).  Roll pancake, serve with Lingonberry preserves or Lingonberry syrup.  To keep pancakes warm, until all the batter is used, place them on a serving platter, and keep in oven at 200 degrees.  I like to spread my pancakes with butter, then spread Lingonberries on top, roll them up, dust them with powdered sugar, and ENJOY!

 

 

Lingonberry Apple Pastry Delight

 

1 Sheet puff pastry at room temperatures

4 Apples

1 Tablespoon corn starch

1/2 Package regular or low-fat cream cheese at room temperature

1 Cup Lingonberry preserves

1 Egg yolk

1 Handful slivered almonds

1 Tablespoon coarse granulated sugar

 

Peel, core, and dice or slice apples, then mix with corn starch.  Roll out puff pastry into large square and put on lightly greased baking sheet.  Spread cream cheese in middle of pastry.  Top with apple/corn starch mixture, then with Lingonberries.  Bring each corner of pastry to the middle of apple mixture to form a square.  Slightly overlap to seal, brush with egg yolk, sprinkle with almonds and sugar.  Bake at 350 degrees for 25 - 30 minutes or until golden brown.  Let cool a bit, then glaze with this mixture: 

 

1/3 Cup powdered sugar

1 Teaspoon vanilla

1 Teaspoon milk

 

Drizzle, artfully, over the top. 

This is a very easy, yet elegant treat, that will surprise your family or guests, especially when served with ice cream!
